Forty seats, and no plans for more
Nora Beckwith opened Pilcrow in 2021 in a room that had been three other restaurants in eight years. The bet was simple: one dining room, a menu short enough to cook properly, and prices printed where people can see them before they walk in.
The name is the mark that starts a new paragraph. It seemed about right for a room on a street that had been through a few.
How we pay people
There is a 20% service charge on every bill and it is not optional. It goes to the whole team, kitchen included, and it replaces tipping entirely — there is no line to add more, and the staff are paid the same on a quiet Tuesday as a full Saturday. Say something if you'd like it removed and it will be, no questions.
Where the food comes from
Vegetables from Vitruvian Farms and Tipi Produce. Trout from Lake Superior, whitefish from Bayfield. Cheese from Fromagination on the Square. Bread and pasta made here. Anything marked Local travelled less than ninety miles; anything not marked didn't, and we won't pretend otherwise.
